Mexican Chicken Stew
The recipe I use is HERE from BBC Good Food books. I have a few of their books as I finds them nice & easy to follow plus it usually all tastes really good.
As it was only Rob & I having this for dinner, I decided to do a little less but bulk it out more by adding peas. We have had this before using the proper amount & this tasted just as nice with a little adapting for our needs this time.
